Yep, you read that right. Cookies for breakfast is a thing!
But, we’re not chomping down on store-bought choccy bickies for our brekkie. Instead, we’ve rounded up our fave cookie recipes that are sugar-free and contain nutrient-dense ingredients to get your day started the right way!
So, make your life easier and whip up a batch of these during your Sunday Cook-Up and you’ll be the envy of your workmates for the rest of the week!
Corn Fritter Drop Cookies.
In true IQS fashion, we’re starting off with a savoury cookie! These take all of the best elements of both corn fritters and biscuits and combines the two. These are super easy to tote to work and can be enjoyed with eggs if you want the added protein. Yum!
2-Ingredient Banana Bread Cookies.
Not only are these cookies dead simple to make, but they are chock-full of oats! These complex carbohydrates are great for keeping you full and regulating your blood sugar as they break down slowly in your bloodstream.
Meal in-a-Biscuit Crackers.
These crackers are filled with healthy fats, thanks to the nuts and seeds, which means you’ll be satiated all through the morning. Pair these with some mashed avo and you’ve got yourself an easy brekkie!
Apple Bircher Breakfast Cookies.
These cookies really do it all! Enjoy first thing in the morning for brekkie, or as an afternoon snack. You could also pop a few in your kid’s lunchbox (just be mindful that this recipe contains seeds). And, the combo of apple and cinnamon is a winner.
Pumpkin + Parmesan Scones with Cinnamon Butter.
We know that these aren’t technically cookies, but these scones are worth breaking the rules for. Not only are they filled with pumpkin and cheese, but the accompanying cinnamon butter is delicious, without being too overpowering. Need we say more?
