Low Carb Coconut Rum Balls
This classic holiday treat is a family favorite since my grandmother started making them every holiday season for our family. She's passed now, but I've carried on this tradition just making them sugar-free rum balls and gluten free too!
I think she'd love my easy keto rum balls and I bet she would be honored that I adapted her original recipe to make it fit into my keto diet lifestyle. In fact, I think she'd love all my keto recipes!
This Christmas recipe can also easily be adapted for a dairy-free makeover simply by swapping out the butter for coconut oil instead.
Carbs in Classic Rum Balls
According to the app Cronometer, one rum ball from Trader Joe's has 14 grams of total carbs in a small ball weighing 25 grams, that's tiny compared to ours!
It has just 1 gram of dietary fiber and 9 grams of sugar. Next time you're in the mood for a sweet snack, make our easy no bake, quick keto version instead!
Carbs in our Keto Rum Ball Recipe
Our spiced rum balls are not small balls so keep that in mind when making them. I used a 2 tablespoon cookie scoop but you could make them smaller if you prefer.
One large rum ball has a total of 6 grams of carbs but with the dietary fiber of 4 grams, they have just 2 g of net carbs.
The great news though is that just one rum ball is so completely satisfying you won't feel deprived at all or need another.

How Can I Make these Rum Balls alcohol-free version?
If you would prefer a no sugar alcohol free rum ball, no problem! Simply swap the dark rum with this imitation rum extract instead.
You could even swap the rum extract with pure vanilla extract too if you really don't like the flavor of rum.
Can I Swap the Low Carb Sweetener used?
I used a monk fruit allulose brown sugar substitute because I love this blend. I think a brown sugar sub works to compliment and taste better with the rum and chocolate flavors.
Feel free to swap with another low carb sweetener you like.
You might like adding some chocolate liquid monk fruit sweetener instead of the monk fruit allulose blend I used.
I only used ¼ cup of the sweetener, but if you remove that amount and opt for a liquid sweetener you may get less than 14 rum balls.
Why 2-4 tablespoons of Rum?
I used just 2 tablespoons of rum in this recipe. Each time I've made it, my hubby always felt it needed more.
Everyone has their own personal taste when it comes to alcohol and sweet treats. I opted for 3 tablespoons. Hubby still felt like more was needed and that they only had a hint of rum.
It's up to you to start with just two tablespoons then taste the mixture and decide if you want a stronger rum taste in these easy coconut rum balls.
What if I don't have a food processor?
If you don't have a food processor, I would recommend getting one when they go on sale.
The food processor helps so much in quickly blending and processing. It will take so much longer if having to chop by hand.
You might be able to make this in smaller batches using a high-speed blender. The blender just doesn't have enough surface area to place the entire recipe dry ingredients in it.

Easy No Bake Sugar Free Low Carb Keto Rum Balls
Ingredients
- ½ cup unsweetened cocoa powder (please use a good quality dark chocolate powder to avoid bitterness)
- ½ cup sunflower seed flour or almond flour or almond meal
- ¼ cup coconut flour
- ½ cup salted butter soft or room temperature or coconut oil softened for dairy free
- ½ cup unsweetened shredded coconut
- ¼ cup Monk Fruit Allulose brown sugar sub or see notes above
- 2-4 tablespoon Rum or imitation rum extract for alcohol free version (see my notes above on why 2-4)
- ½ cup unsweetened shredded coconut (to coat rum balls)
Instructions

Add all ingredients to a food processor or large bowl and pulse to combine. Taste and adjust sweetener or rum if needed. Line a large cookie baking sheet pan with parchment paper.

Using a large cookie scoop (about 2 tablespoons) form 14 mounds. Roll and coat in additional shredded coconut until covered and place onto tray. Cover and Refrigerate until ready to serve.

Storage: Store any leftover keto rum balls in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
