Easy Keto Holiday Cranberry Cottage Cheese Bread

This very simple low carb cranberry orange holiday bread starts with a scrumptious moist batter made with cottage cheese that you'll never taste! Flavors of cinnamon, cranberry and orange plus white chocolate on top is a perfect brunch recipe to serve to family and friends during the holiday season. 

Keto Cranberry Orange Cottage Cheese Loaf

​The best thing about this easy keto bread recipe I'm sharing today is that, not only does it include cottage cheese which makes it lower in fat than many keto bread recipes, it also doesn't use any protein powders and it's almond flour free. 

The other reason you will love this quick bread is because you don't need to whip any egg whites separately which I know is such a pain to many of you!

Everything gets thrown together in the mixer and then spread into the baking pan, making this one of the easiest quick keto breads you will ever make!

It's a nut free keto bread if you skip adding any the pecans.  Finding a recipe that is nut free, keto, and gluten free is a great way to be able to include all those who have food allergies.

Keto Cottage Cheese Bread

​As you may know, a great way to add protein to you diet is to include cottage cheese.

It is a great source of protein and I often add it to many of my keto and low carb recipes. It's one of the easiest ways to create a high protein recipe for a keto diet or low carb diet. 

The 2-ingredient cottage cheese bread recipe became a viral hit on TicTok, but if you've tried it, you know it wasn't the best tasting keto bread out there. I adapted that recipe to make an incredibly tasty low carb bread. 

​My original recipe doesn't use any low-carb flours, but does use some specific brands of egg white protein powder and whole egg powder which often can't be found in your local grocery store.

I know many people were upset and for good reason, if you're on a budget those ingredients are expensive. 

​The next popular bread recipe I made is the cottage cheese cloud bread which uses whey protein plus just a little egg white powder. Both recipes require the whipping of the egg whites to stiff peaks.

It's a little but of extra work, but it yields a fluffy bread with the texture of a all purpose flour regular bread. 

Carbs in Traditional Cranberry Orange Bread

Using the app Cronometer, I found a cranberry orange quick bread suitable for a gluten-free diet that showed one slice or 30 grams had 26 grams of carbs and just 1 gram protein.

That amount of carbs for one slice is too high for a ketogenic diet and would kick you out of ketosis and cause sugar cravings.

Can I Swap the Cottage Cheese?

​This easy recipe uses cottage cheese to replace needing any fat like butter, or coconut oil.

I adapted this recipe from my Coconut Flour bread that resembles honey wheat bread in texture. I removed the olive oil and heavy cream from that recipe to make this quick bread to be lower in fat than some of my other keto bread recipes.

I have lactose intolerance as does my daughter so I always buy either the Green Valley lactose free brand or the Lactaid brand. 

One slice had 5 grams of protein. The rest of the nutritional information is at the bottom of this page on the printable recipe card.

​You might be able to swap the cottage cheese with ricotta cheese or sour cream, though I've not tested these changes in this new recipe.

Ricotta cheese is similar in the extra protein it has but it does have more fat and carbs than cottage cheese. 

Can I swap Almond Flour with Coconut flour?

​I would not recommend swapping the coconut flour with almond flour because you will need to use less eggs and more almond flour.

It's not an even swap. ¼ cup coconut flour is about equal to 1 cup almond. 

Can I swap the whole fresh eggs for egg whites?

​I haven't tested this great recipe using just fresh egg whites instead of whole eggs, so I can't recommend that. It certainly may work, but since I've not tried it myself, I don't know how the texture would be.

Changing any ingredient in keto recipes may not yield the best results.

I added some unsweetened dried cranberries, some melted sugar free white chocolate chips and a few more pecans!

I melted ½ cup of sugar free white chocolate chips with 1 tablespoon of butter and drizzled it over the tops and then threw on a few more chips.

Easy Low Carb Keto Cranberry Cottage Cheese Bread

Instructions

  • Preheat oven to 375 degrees F. 
  • In a stand mixer or large bowl with hand mixer place wet ingredients- the eggs, cottage cheese and blend until combined.  
  • Add the dry ingredients- coconut flour, granulated sweetener, baking powder, xanthan gum and salt to the stand mixer or bowl using the electric mixer and blend until incorporated. 
  • In a small bowl add the cranberries, brown sugar sub, pecans, cinnamon, nutmeg and orange zest and mix well. Add this cranberry mixture to the mixer and blend on low speed to just combined.
  • Line a 1.5 Quart (8 by 4) loaf pan,  (metal loaf pan or ceramic) with parchment paper and spread batter in pan. 
  • Bake for 30-35 minutes until a toothpick in center comes out clean and it's golden brown. Baking time varies using a gas oven as opposed to electric. Electric ovens need less time than gas, so check bread at 25- 30 minutes.
  • Allow to cool in pan for 20 minutes before removing to a wire rack. 
  • Cool completely before adding toppings and slicing. 
  • Storage; Place leftovers of this delicious bread wrapped in aluminum foil or in an airtight container in the fridge for up to 7 days or freeze for up to 1 month.

Optional toppings

  • Place the white chocolate chips and butter into a small microwavable bowl and heat for 30 seconds, stir well, if still not smooth, heat another 30 seconds and stir until smooth. Drizzle over the loaf. Sprinkle dried cranberries if desired.
