Bored of your work lunch? Here’s how to boost your lunchbox

At IQS, we love to inspire you with lunchbox ideas for your little ones.

But, let’s talk about your lunch for a minute. Are you over your daily sandwich? Or, do you nip next door to the local cafĂ© everyday and spend WAY too much cash on a salad, topped off with a sugary dressing?

Believe it or not, adults can have scrumptious, and nutritious DIY lunches as well. These ideas can be easily prepped the night before, or thrown together from the comfort of your desk. (And yes, they’re suitable for kids lunchboxes, too!)

1. Shake up your salad.

It’s easy to get sick of salads when you’ve been eating the same Caesar for a year. Instead, pre-slice a rainbow of veggies and prep your dressing the night before. Then, simply assemble when lunchtime rolls around. This office-friendly recipe even has spring roll “crisps” you can make in the microwave!

2. Top your toast.

Keep a loaf of sourdough bread at work – then all you need to do is bring some fresh ingredients to make it a meal. This deconstructed avo toast will be a hit with any coworkers you choose to share it with. And, you’re bound to love our other toasted delights!

3. Meal-in-a-jar.

We know it seems hipster, but there’s nothing handier than a big recycled glass jar (it’s sustainable, too!). The options are endless – soak overnight oats, layer salads or fill them with noodles which you can cook with boiling water from the office kettle.

4. Make the most of your Thermos.

For all our chilly friends, make a big batch of soup (the Coconut Curry Pumpkin Soup is a winner) and pack the leftovers away in a Thermos or a jar with a tight lid. For a light summer option that’s also satiating, try a green smoothie with plenty of healthy fats.

5. Love your leftovers.

Just like with the I Quit Sugar: 8-Week Program, we plan our dinners based on what will work for lunch tomorrow! A great idea is to make a few extra patties for your burgers and then serve them “naked” with a salad the next day for lunch. Sometimes, it’s even tastier the next day!
