5 delicious toast toppers to get you through to lunch

Need a breakfast that fills you up and keeps your energy going right through to lunch?

Toast might not be your first option. The white, refined kind especially can make your blood sugars rise and drop rapidly, making you even hungrier than before!

But that doesn’t mean you have to give up bread completely. A good nutrient-dense version can be just the thing to start the day with (cue our gluten-free I Quit Sugar: Superfood Paleo Bread Mix, made with satiating with almond meal and chia seeds!).

1. Tomato, feta + avocado.

This is one for those who love Mediterranean flavours. Slice or smash a quarter of an avocado and top with fresh tomato, crumbled feta, a good squeeze of lemon and extra virgin olive oil.

2. Banana, tahini + cacao nibs.

Sometimes all we want is some sweetness in the morning. But to temper the sugar rush, we’ve sprinkled our sliced banana with savoury tahini and bitter cacao nibs. It’s all about that flavour profile.

3. Eggs, asparagus + watercress.

This one is especially good if you’ve had a bit of a big night (we don’t encourage it, but it happens!). Asparagus and eggs both help break down alcohol. This wasn’t why our recipes manager Meg developed the recipe though!

4. Mushroom stroganoff.

It might seem a bit fiddly for breakfast, but this mushroom stroganoff can actually we whipped up in 20 minutes – just enough time for you to flick through the morning paper.

Sweet, fresh and totally Instagram-worthy, this toast topper is perfect for brunching with friends. Luckily nectarines are in season!
