“It’s become an office joke that I’ve eaten the same breakfast every day since I started. But when you’re onto a good thing, why stop? I boil two eggs at home and when I get to work it’s a three-minute assembly – toast, eggs, salt and pepper. If I’m feeling fancy, I’ll add a drizzle of tahini. I keep a jar in my desk drawer.”

“I make a big batch of Baked Oatmeal at the start of the week and then just tote my portion into work each morning. It’s quick to reheat and delicious served with a bit of coconut yoghurt. You can mix up the flavours too – I’ve been doing a carrot cake inspired one lately.”

“Being a recipe developer and nutritionist you might think I always have a perfect breakfast – perhaps some sourdough with fresh avo and poached eggs? Well, that’s definitely not the case.
“I rush in the mornings, misplace my keys, forget to bring work-appropriate shoes (I ride to work), so storing stuff at the office is the easiest way for me to eat a good breakfast. I keep eggs in my desk drawer and spinach in the fridge and it only takes two minutes to make these. Easy!”

“I combine 1/2 a cup of rolled oats and1/2 an apple grated with a little shredded coconut, chopped walnuts, chia seeds, ground cinnamon and almond milk and refrigerate it overnight. The next day I take a small jar of it to work.
“My hot tip is adding milk, heating it up in the microwave and drizzling with a little rice malt syrup.”

“I’m a big porridge fan in colder months. It’s quick, easy and super satisfying – especially when you can enjoy it at your desk rather than stuffing it down on your way out the door! I’ve recently discovered quinoa actually makes an awesome substitute for plain oats so I’ll often pre-cook a bowl of quinoa for the week then throw 1/2 cup of it into a jar with 2/3 cup coconut milk and one teaspoon of raw cacao the night before. Then all I’ve got to do is pop it in the microwave at work for 90 secs and voila!”
