Our nutritionist, Liv, has discovered the tastiest new foodie trend and we’re jumping on it – cauliflower toast!
This wonder veg makes the best crunchy addition to brekkie, and it’s gluten-free.
Ingredients:
- 1 cauliflower
- 30 ml extra virgin olive oil
- Desired toppings – avocado, eggs
Method:
- Preheat a fan-forced oven to 180ºC / 350ºF / Gas Mark 4 and set to grill.
- Prepare two pieces of cauliflower toast by cutting a whole cauliflower in half and slicing off a chunk about 3cm thick. Place the two slices of cauliflower toast on a baking tray, drizzle with extra virgin olive oil and sprinkle with salt and pepper. Place in the oven for 20–25 minutes, until edges have browned.
- Top with desired toppings! We went with our fave avo and egg combo.
