Move over sweet potato toast, because something even better is here.

Our nutritionist, Liv, has discovered the tastiest new foodie trend and we’re jumping on it – cauliflower toast!

This wonder veg makes the best crunchy addition to brekkie, and it’s gluten-free.

Ingredients:

  • 1 cauliflower
  • 30 ml extra virgin olive oil
  • Desired toppings – avocado, eggs

Method:

  1. Preheat a fan-forced oven to 180ºC / 350ºF / Gas Mark 4
 and set to grill.
  2. Prepare two pieces of cauliflower toast by cutting a whole cauliflower in half and slicing off a chunk about 3cm thick. Place the two slices of cauliflower toast on a baking tray, drizzle with extra virgin olive oil and sprinkle with salt and pepper. Place in the oven for 20–25 minutes, until edges have browned.
  3. Top with desired toppings! We went with our fave avo and egg combo.
