7 quirky ways to use up your leftover coconut milk

It’s little secret we’re a little nuts for coconuts. So, it’s not uncommon to find jars of leftover coconut milk in our fridge on any given day.

Some people steer clear of coconut milk due to its high saturated fat content. But coconut milk actually a-okay to use mindfully! It’s super nutritious and incredibly satiating (so you can’t really gorge on it anyway).

And luckily, there are so many things you can do with coconut milk aside from making your Baked One-Pot Coconut Fish Curry extra creamy. One doesn’t even involve eating it!

(A quick note: If you’re buying coconut milk from the supermarket, always opt for the full-fat version and watch out for added sugar and weird preservatives in the ingredients lists.)

1. Soak your oats.

Spend five minutes at the end of dinner prep whipping these up and a delicious (and satisfying) breakfast will be waiting for you the next day.

2. Try a face mask.

Skin a little dry? Coconut milk makes a great moisturising face mask. Mix together equal parts milk and honey (you can add a bit of almond oil if you’re extra dry). Leave on your face for 10–15 minutes, rinse and pat dry. Hello, glow!

3. Whip up a gut-healing snack.

4. Boost your smoothies.

Coconut milk makes a great addition to your morning green smoothie. It makes the fat soluble vitamins in your veg and fruit more readily available to the body, and will keep you full ‘til lunchtime.

5. Coconut rice.

Making a curry? Dump your leftover coconut milk can into your rice for an extra creamy, coco-nutty finish. You can also add a little ginger for something really special.

6. Jazz up your cuppa.

Coconut milk makes a good alternative to cow’s milk if you find lactose tough to digest. Try blending with a little of our favourite anti-inflammatory spice for a morning brew that will really kickstart your day.

You can also try half coconut milk and half almond milk, just make sure you’re choosing your almond milk mindfully.

7. Make more curry.
