5 healthy lunchbox ideas for adults (that are actually toteable!)

If you’ve been following us for a while, you’ll know that we talk a lot about healthy lunchbox ideas for kids.

But what about nutritious, easy, cheap lunches for adults? That are actually toteable and don’t require much assembly in the office?

Been spending too much on café lunches or just need a break from the canned tuna sandwiches? You’ll love these easy, healthy lunchbox ideas. (And don’t worry – they’re all perfectly suitable for kids lunchboxes, too!)

1. A fresh twist on salads.

It’s easy to get sick of salads when you’ve been eating the same office café Caesar for a year. Instead, pre-slice a rainbow of veggies and pack dressing in a small, washable sandwich bag. This recipe is awesome – you can even make spring roll “crisps” in the microwave!

2. Toteable toast toppers.

Keep a loaf of healthy sourdough bread at work – all you need to do is bring some fresh ingredients to make it a meal. This deconstructed avo toast will be a hit with any co-workers you choose to share it with (or check out our toast topper compilation for more ideas).

3. Meal-in-a-jar.

We know it seems hipster, but there’s nothing more handy than a big recycled glass jar (it’s sustainable, too!). The options are endless – soak overnight oats, layer salads or fill with noodles which you can cook with boiling water from the office kettle.

4. Make the most of your Thermos.

In winter, make a big batch of soup (this Coconut Curry Pumpkin Soup is superb) and pack the leftovers away in a Thermos or a jar with a tight lid. For a light summer option that’s also satiating, try a green smoothie with plenty of healthy fats.

5. When in doubt, use your leftovers.

Like the I Quit Sugar: 8-Week Program, we often plan our dinners based on what will work for lunch tomorrow! A great idea is to make a few extra patties for your burgers and then serve them “naked” with a salad the next day for lunch. Sometimes, it tastes even better this way!
