Easy Brownie Cake Pops Recipe

Make a child happy today and make one of these for them for Valentine's day! No seriously, these are the biggest kid friendly treat around, so much fun to make together and as easy to hold and eat! 

Making them with my Fudgey Flourless Brownie recipe and some sugar free healthy frosting adds a richer flavor in my opinion.

No one will ever guess they are sugar free, grain free and gluten free! I promise these have the most perfect texture and it's been tested out with a bunch of cub scout kiddies who ate them up! 

This is an easy Valentine's recipe to make and share and you can do it without a cake pop pan!

​Even if I had a cake pop mold thingy I probably wouldn't have used it anyway. The fudgy brownie recipe needs to be cooked, cooled, crumbled and then mix brownie crumbs with frosting. Rolling them is the easy part and getting your kids involved is the fun part!

I didn't have Styrofoam block like other normal people who bake these kinds of things often. So I improvised and used a dishwashing rack that was brand new of course and hey, it worked perfectly.

Carbs in Traditional Cake Pops

According to the app Cronometer, 1 chocolate cake pop from Starbucks has 21 grams of carbs and 16 grams of sugar. Much too high for anyone on a keto diet since many allow themselves 20-30 carbs daily.

If you're on a low carb diet, this amount of sugar is still quite high and will most likely cause cravings. Skip these store bought cake pops and make our delicious luscious chocolate brownie cake pops instead.

Carbs in our Keto Cake Pops

Our keto cake pops have just 4.5 grams of net carbs per pop or 5 grams of total carbs. These won't spike blood sugar or cause sugar and carb cravings.

​Fudgey decadent chocolate cake pops and they don't fall off the stick!

We found these little bags specifically for cake pop sticks at Joann Fabrics. We placed each cake pop into a mini cupcake liner as well to bring them to our cub scout Pine Wood Derby to donate.

We only brought back 3 cake pops which made my 3 kiddies happy to have one more at home and made this sugar-free mom super happy they loved them so much!

My very picky teen chose my sugar free cake pops over all the regular cupcake and other desserts there so that is truly a remarkable thing, especially for a picky teen!

So before you look at the nutrition info I want to point out that this is a special treat and certainly not a low fat or low calorie one and not intended to be.

It is however intended to reduce the amount of sugar my kids consume and making them sugar free as well as grain and gluten free is a much better option that anything else out there for sweet tooth.

Just stating the facts friends. Slightly indulgent but worth it for those of us who are chocolate lovers for Valentine's day or anytime you need a kid friendly gluten-free dessert for the next party!

I was trying to hold them in one day and take the picture and of course totally unsuccessful, so I called over my little man, just 8, with a way cuter hand than my own to say the least. I love this pic!

Substitution Options

I have found sugar free milk chocolate chips by the brand Lily's at whole Foods. Otherwise you could also use unsweetened carob chips or the highest cocoa content for a chocolate chip or unsweetened baking chocolate you can find. Sugar Free White Chocolate chips can also be used. 

If you don't have liquid stevia and only have packets you can use 4 packets or 2 teaspoons pure stevia extract.

I have not tried subbing coconut oil for the butter in the recipe but I do think that would work just fine as well.

Ingredients

Instructions

  • Make sugar free brownie recipes and allow to cool then place crumbled brownies in a large bowl. Set aside.
  • To make frosting, whip cream, vanilla extract and liquid stevia in a stand mixer or large mixing bowl with electric mixer, until peaks form. Set aside.
  • In a sauce pan over low heat, melt baking chocolate and butter then whisk in cocoa powder until incorporated. You could also just use a microwave-safe bowl and microwave for a minute until melted. Turn off heat then stir in chocolate monk fruit.
  • Slowly blend the melted chocolate butter mixture into the whipped cream.
  • Stir chocolate frosting into crumbled brownie mixture until all combined. If you wanted to use the food processor to crumble the brownies and then mix the melted chocolate into the food processor that will work too. 
  • Form the cake batter into brownie balls using about 2 tablespoons or a cookie scoop and place on a parchment paper lined baking sheet pan. You should be able to make 21 pops from the cake mix. Take a lollipop stick and gently push the tip of the stick into each ball and refrigerate for 30-60 minutes.
  • Once cake ball is firm after setting in fridge, melt dipping chocolate in the microwave at 30 second intervals until melted and stir until completely smooth.
  • One at a time, dip cake balls into melted chocolate, tap slightly to remove excess chocolate then stand in Styrofoam block or hang on a dish rack until set.
  • Add sugar free brown sugar sub or sugar free sprinkles to wet chocolate if desired before they set.
  • Wrap individually for gift giving  or store balls in an airtight container in the fridge until ready to wrap and share. Store leftover cake pops in the fridge for up to 1 week. Remove from the fridge to come to room temperature before serving.
