Find out how we squeeze in 7–9 serves of veg a day

While a whopping 93 per cent of Aussies fail to eat the standard five serves of veggies a day, we aim to do even better, aiming for 7–9 serves of veg every single day!

And while it might sound hard squeezing that many veggies into a single day, it really isn’t. An average serve of vegetables comes in at around 75g – which works out to be about ½ a cup of greens, which isn’t so much. Keen to give it a go? Try these dishes for brekkie, lunch and dinner and you’ll soon be hitting your 7–9 serves of veg a day!

Breakfast.

We always start our day with veggies – a brekkie without veg is a missed opportunity! The easiest way to consume vegetables in the morning is through a green smoothie. One of our fave smoothies is our Detox Green Smoothie as it’s packed with baby spinach, cucumber and avocado. We also love adding zucchini, beetroot or pumpkin puree to our smoothies – the options are literally endless!

If smoothies aren’t your jam, try veggie packed eggs instead. A great example is this Veggie + Bacon Hash with Eggs which is filled with Brussels sprouts, potato and leek. Yum!

Lunch.

If we don’t have any leftovers from the night before, we often throw together a quick tuna salad. But, there’s nothing bland about our salads! We love combining salad greens, cucumber, tomato, snow peas, shredded red cabbage, grated carrot and canned tuna. As for a dressing, a drizzle of extra virgin olive oil and ACV is just perfect! Otherwise, our Simple Pumpkin Salad is also packed with nourishing veg and is super easy to whip up for your lunchtime feast.

Dinner.

For our final meal of the day, we pack in the veg by opting for a veggie stir-fry, curry or a stew. Our Lime + Ginger Stir-Fry is a particular fave and is extremely versatile so it’s easy to use whatever veg you may have in the fridge. It’s also super easy to add in cooked chicken should you want something meatier. Otherwise, our Speedy Massaman Chicken Curry is brimming with veg thanks to the addition of sweet potato, cauliflower and broccoli.
