Prep one meal, eat for a week. (And go!)

Big week ahead? Eating healthy home-cooked dinners every night might feel totally out of reach…

Don’t order pizza just yet! By cooking just one base meal on a Sunday, you can roll out five amazing dinners during the week.

You’ll only need a few extra ingredients (think fresh veg and dried spices). And you’ll be in and out of the kitchen in less than 15 minutes. Seriously!

Sunday: Get cooking.

Start with our Slow Cooked Italian Beef Brisket. Cook and divide this into five portions. Refrigerate two and freeze the other three. These are your bases for the next five nights.

Hot tip: any slow-cooked meat recipe will do, or a big lot of lentils if you’re vego. Just like our I Quit Sugar: 8-Week Program, these suggestions are made to be flexible!

Monday: Italian ragu with zoodles.

Reheat a portion of beef from the fridge in a pan with a handful tomatoes, some frozen peas and/or whatever other veg you have leftover in the fridge from last week.

Serve on a bed zucchini noodles and add some about-to-go-off herbs on top, if you have them.

Tuesday: Greek beef grain bowl.

Reheat your next portion with a squeeze of lemon and some dried mint and/or oregano.

Serve with salad greens, cooked rice or quinoa (we keep a stash of cooked grains in the freezer, too), and a cooling yoghurt and cucumber dressing. Sour cream or feta would also work here, use what you have!

Wednesday: Brisket with apple slaw.

“Dude food” never looked so good.Take your first portion out of the freezer and place in the fridge in the morning.

It will be ready to pair with this healthy Apple Slaw by the evening for a meal the whole fam will love. Just reheat the meat in microwave or on the stove until it’s piping hot.

Thursday: Brisket tacos.

Defrost and reheat tonight’s beef with a pinch of paprika, cumin and cayenne pepper.

Wrap it up in soft tortillas and stuff with crunchy salad greens. Melt a bit of cheese over the top if you’re feeling fancy!

Friday: Leftovers skillet pancake.

Sarah’s no stranger to repurposing her leftovers. Her Crisp Bibimbap Skillet Pancake from I Quit Sugar: Simplicious is basically Korean bubble ‘n’ squeak.

Chuck whatever you have lying around in the back of the fridge with the last portion of defrosted meat. Add nuts or seeds for extra crunch, if you like. And there you have it!
