We’ve smooshed it into Sweet Potato Brownies and roasted it to make Sweet Potato Chips… but our latest love? The sweet potato boat!
These little vessels can hold all sorts of deliciousness and make a great swap for breads, pastas and other grains. Plus, you can save the part of the sweet potato you scoop out to make mash for another meal.
We’ve filled these ones with spicy Mexican chicken, and whacked in some greens for good measure. They’re a hearty, warming meal we reckon could easily launch 1,000 ships.
