Sweet potato toast, people! Blogger Kelsey Preciado launched it into the social stratosphere when she had the idea to the slice her sweet pot and cook it in the toaster.
Here’s the theory. Toast the tuber on high for a few minutes, and you’ll have the perfect sweet potato “toast” in no time.
But, um, can you really cook sweet potato in the toaster?

Maybe our toaster wasn’t hot enough, but our sweet potato took at least five toasts… and still turned out it al denté. It tasted good, but it would have tasted even better roasted in the oven with olive oil and salt. Which brings us to…

Sent to us by the lovely Lisa Bryan, this sweet potato “toast” is definitely worth the extra oven time (and won’t ruin your toaster). Top with avocado, bananas and almond butter or go fancy with smoked salmon and poachies. Yum!
