Keto Panna Cotta

Panna Cotta in Italian means, "Cooked Cream". It's a very simple sweet treat, yet delicious Italian dessert that uses just a few simple ingredients. 

Traditional panna cotta has cream, sugar and vanilla flavors in it, as well as gelatin to help it set and mold.

Sometimes other extracts like coffee or lemon, are used to create slight flavor variations in this wonderfully silky smooth, creamy dessert. 

Carbs in this traditional Italian dessert according to the app Cronometer, a basic vanilla bean with about 100 grams for a serving has 16.5 grams of total carbs.

That's quite high for anyone on a keto diet since most people stick to about 20-30 total carbs a day.

Even if you're not a fan of cottage cheese, you can't notice the taste of it or the texture of it. It's completely hidden in this easy keto dessert. 

​Easy recipes with Cottage cheese have been exploding all over social media but I've been creating recipes since 2011 using cottage cheese in delicious desserts but also savory recipes.

​Our keto panna cotta recipe has just 2 grams of carbs and 3 g protein! Since there is no dietary fiber in this recipe there are no grams of net carbs, it's just total carbs.

​Can I swap the Low-Carb Sweetener?

I used monk fruit sweetener that's combined with allulose but if you can't find that or don't want t purchase it online, you can use another low carb sweetener your prefer.

​I've got thousands of recipes here on my website since 2011 so it's taking me some time to convert many of my low-carb recipes that use erythritol.

Since the recent studies have concerned many people from wanting to use it, I have been using the monk fruit allulose bend in most of my easy keto recipes. 

​If you use Allulose by itself you may need to use more than I did since mine includes Monk Fruit it's sweet enough.

You may want to use an additional sweetener perhaps vanilla stevia or liquid monk fruit.

Can I leave out the gelatin?

​No, this simple recipe needs gelatin to make it hold it's shape. 

This Grass-Fed Gelatin is the one I use because of the fact of what I learned in Nutritional Therapy School about toxins.

All toxins are stored within our fat cells, people and animals, so if you want to make sure you aren't ingesting toxins, using grass fed gelatin is the best option for your health.  

Another great brand is Great Lakes as well as Further Foods.

You could swap with agar agar for a vegetarian option.

Sugar Free Low Carb Keto Cottage Cheese Panna Cotta

Ingredients

Instructions

  • Grease six- 4 ounce ramekins.
  • Pour heavy cream and cottage cheese into a medium saucepan. Use an immersion blender to remove the curds from the cottage cheese.
  • Turn heat to medium heat and sprinkle gelatin over cream mixture. Don't stir, so gelatin blooms while the mixture comes to a simmer, about 3-5 minutes.
  • Once at a simmer, reduce heat to low and continually whisk mixture until gelatin mixture is completely dissolved.
  • Whisk in the salt, and sweetener and continue to simmer just about 2-3 minutes. Turn off heat and stir in vanilla extract. Taste and adjust sweetener if needed.
  • Evenly pour panna cotta mixture into dishes and allow to cool 15 minutes. Place in the refrigerator covered with plastic wrap to set for about 2-3 hours of chilling time before serving or overnight.
  • Store covered in an airtight container in the fridge for up to 3 days.
