Easy Sugar Free Low Carb Keto Peanut Butter Balls

Just 6 simple ingredients is all you need to make these no bake, sugar free, keto peanut butter balls. Perfectly portioned for your low carb or keto diet and just 4 grams total carbs or 3 g net carbs per serving!

SUGAR FREE No Bake PEANUT BUTTER BALLS

Creamy, sugar free peanut butter balls are an easy no bake recipe  that requires just a small amount of time in the kitchen and no baking needed.

They are a portion controlled treat to enjoy when you're sweet tooth needs a snack on your sugar free, low carb or keto diet. The filling is made quickly in your mixer, then frozen, before adding a delicious, sugar free melted chocolate coating around these luscious creamy peanut butter balls.

Top with optional crushed peanuts for a festive look, as well as to make sure anyone with peanut allergies knows exactly what's in them!

Low Carb Sweetener Options

I used Better than Sugar Confectioners sweetener for these no bake chocolate peanut butter balls, but you can use any low carb sweetener you prefer.

Confectioners is better than using granulated because you want a nice smooth texture that granular sweeteners would not provide.

Another option besides confectioners I vanilla liquid stevia or toffee flavored liquid stevia, both would be delicious. But since liquid stevia does not provide texture as confectioners would, the peanut butter balls may be very soft.

HOW TO MAKE KETO Low Carb PEANUT BUTTER BALLS

Ingredients

You need unsweetened peanut butter, smooth is best, unsalted butter, low carb sweetener, vanilla extract, and salt.

For the outer coating you need sugar-free chocolate chips and butter or coconut oil.

Directions

Add the natural peanut butter and butter to a stand mixer and blend until smooth. You could also use a food processor. 

Add a ½ cup of the powdered sweetener to the peanut butter mixture along with the almond flour, vanilla extract and salt. Blend until smooth.

Add remaining confectioners to the mixer and blend once again until smooth.

Taste and decide if it's sweet enough for you. If so, place bowl in the fridge for 1 hour. Line a large baking sheet pan with parchment paper.

Remove from refrigerator and form mixture into 20 balls. I used a large cookie scoop. Spray hands with avocado oil to make it less sticky to roll.

Place the balls onto the baking pan and freeze for 1 hour.

After the balls have frozen, melt the chocolate and butter together in a bowl in the microwave for 30 seconds to a minute. Mix until smooth.

Drop one peanut butter ball into the chocolate, roll it around and use a fork to remove the ball. Tap the edges of the dish to remove excess chocolate off the bottom and place ball onto parchment sheet pan.

Once you've coated each ball, place back into the refrigerator to set.

Optional topping: Add crushed peanuts over the top of each ball while the chocolate is still warm, before it sets.

CAN I MAKE THESE NUT FREE?

Yes, you can make these easy keto peanut butter balls, nut free if needed. The peanut butter flavor can be evenly swapped with sunflower seed butterpumpkin seed butter or coconut butter.

Be careful to look at the ingredients listed on each jar, as many contain sugar and unhealthy oils.

CAN I SWAP OUT THE ALMOND FLOUR?

Yes you can swap out the almond flour in the filling for these healthy peanut butter balls if you have a tree nut allergy or prefer not to use it.

You can evenly swap the same amount of almond flour with sunflower seed flour. 

I don't recommend coconut flour for this keto dessert but it might make this great recipe a bit dry since coconut flour is so dense.

HOW TO STORE No Bake Keto PEANUT BUTTER BALLS

It is best to store these keto peanut butter balls in the refrigerator until you are ready to serve them.

They will be fine out on the counter for at least 30 minutes, but to keep from being too soft to hold and enjoy, leaving them in the fridge in an airtight container before serving is best.
