Entree: Smoky Eggplant Dip with Olive + Rosemary Chickpea Flatbreads.
Anyone can go out and buy a premade dip from the shops and pair it with crackers, but making your own is far more special! This smoky eggplant has a seriously impressive flavour which pairs with these tasty flatbreads perfectly. Plus, both these dishes can be made earlier in the day and pulled out when your date arrives.
Main: Lemon + Cinnamon Lamb Shanks with Gremolata.
This is possibly one of the best set and forget meals ever! It takes mere minutes to throw in the slow cooker and by the evening you have a delicious dinner ready with minimal fuss. Your date will think that you went to heaps of trouble with these shanks, but we’ll know the truth!
Dinner: Chocolate Cherry Ripe Cheesecake.
