What is rice malt syrup anyway?

Rice malt syrup is one of our sweeteners of choice, but there can be a bit of a kerfuffle whenever we talk about it…

So, we’re here to clear the air about what this sticky syrup really is.

It contains no fructose!

It might look similar to honey and maple syrup, but the nutritional profile is completely different. Rice malt syrup (also called rice syrup or brown rice syrup) is made totally from fermented brown rice. That means that it’s completely fructose-free and rather, a blend of glucose, maltose and carbohydrates (good news for us!).

It’s no secret that we focus on cutting out fructose because it’s the nasty sugar responsible for a plethora of health conditions. Glucose, on the other hand, is easily broken down by all the cells in our body. So, while we don’t eat a heap of it, it’s a better option when we’re after a sweetener.

You only need a small amount.

When your palate recalibrates, you’ll find you only need a touch of sweetener to get that hit. We stick to half a teaspoon per serve, but you might even find that’s too much for you, so cut it down as much as possible.
