Do you get the most out of your roast? Probs not.

How many of us are guilty of pouring oodles of time and effort into a delicious roast, only to waste the leftovers?

Our office manager Maddy had a chicken-fuelled debate with her younger sister about all the roasted extras. So here’s her guide on how to get the most out of your weekend roast (and prep for the week ahead too!).

Always cook more meat and veggies than you need for dinner.

First off, you’ll need to prep a few extra veggies and maybe even some extra meat to get you through the rest of the week.

Maddy’s go-to roast veggies are sweet potato, parsnip and pumpkin, as well as some roasted greens like asparagus and brussels sprouts.

Use the juices for gravy.

Grandmas all around the world would be ashamed of you pouring those chicken juices down the drain!

If you’ve never made your own gravy, it’s super easy. Set the meat juices aside, thicken with your choice of flour and reduce on a low heat. It’s that simple!

Use the leftovers for tomorrow’s lunch.

Create a new masterpiece from your leftovers by transforming them into a new dish. Maddy’s fave is the Fridgalicious Frittata. It can be kept in the fridge for five days so it’s perfect for when the hunger kicks in!

Make a bone broth.

A bone broth or chicken stock is a great way make use of the bones. Who knew they had so much flavour?!

Once made, measure out your broth into portions and freeze them for a quick ‘n’ easy addition to meals. Maddy loves adding her chicken stock to the Green Minestrone on a cold night!

Puree leftover veggies.

If you can’t eat all the veg you cooked, whip them easily into purees to be used in baking (Sweet Potato Brownies always gets the IQS office excited!), or make them into an easy blender soup!   

Compost the bones.

While this one may seem a little too ‘wellness warrior’, hear us out! Many people buy pre-packaged Blood and Bone based fertilisers for their garden, which is made from animal bones and waste products.

Save yourself the cash and put your leftover bones in your veggie patch for a similar effect. Your garden (and your back pocket) will thank you!
