Tarts are a great way to bring beauty and flavour to any special occasion. They look incredible, but they’re actually pretty easy. (And if you’re just cooking for yourself, you’ll have lunches sorted for the next few days!)
Perhaps the best thing about this recipe is it’s totally customisable. You can easily sub out the beetroot for another root veg (we love the idea of roast pumpkin or fennel, or both). Serve warm or cool with a fresh garden salad for a visual feast that tastes fantastic, too.
