It’s a tall order, but we reckon these Deconstructed Stuffed Tomatoes from David Gillespie’s Eat Real Food Cookbook fit the bill.
You may know David as a long-term buddy of Sarah, and author of Sweet Poison. Turns out he’s a mean cook, too. This twist on the Middle Eastern classic only takes half the work, and is a great example of comfort food without heavy, refined ingredients.
It’s as easy as throwing tomatoes, herbs, onions, bread and bacon into a pot, then sprinkling the whole thing with cheese. Simple, delicious and bound to become part of your midweek cooking repertoire.
