For a while, we didn’t understand the purpose of blondies. Why would you take chocolate out of something?
But one bite of these vanilla-scented blondies and all our memories of brownies faded away (well, just about). They’re delicately sweet, wonderfully fluffy and rich without giving you a toothache.
Plus, they’re gluten-free, sugar-free* and contain plenty of good fats (hello, coconut oil and almonds!) to keep you nicely satiated. We’ve studded them chunks of dark chocolate, but feel free to add fresh/frozen fruit, chopped nuts or a swirl of melted peanut butter, too!
Choc Chip Blondies
* While we quit fructose on the I Quit Sugar: 8-Week Program, these recipes contain a small amount of rice malt syrup (a blend of glucose and maltose). While they have less than half a teaspoon of sugar per serve, we recommend enjoying these treats on special occasions and sticking to a small portion size, or cutting down on the sweetener even further.
