If you’ve read our books, made one of our sweet recipes or you’re joining us on our I Quit Sugar: 8-Week Program, you’ll have seen rice malt syrup bandied about a lot. But what the heck is it, and why do we use it?
While rice malt syrup (also known as rice syrup, brown rice syrup or RMS) is readily available in supermarkets and health stores in Australia, it’s yet to really take off in the UK. But don’t worry, it is out there, you just have to know where to look! Here’s a quick rundown on why RMS is our sweetener of choice, and how to get hold of it.
Rice malt syrup is entirely fructose-free!
What separates RMS from all the other sticky amber syrups is that it contains absolutely no fructose. It’s made from fermented brown rice – a blend of glucose and maltose.
While all added sugars (yep, even RMS) should be limited, the fact that RMS is fructose-free means it’s not as addictive or as bad for your liver as fructose is. Plus, you don’t need a lot of it to sweeten a recipe. Which brings us to our next point…
We only use a teeny amount in our sweet recipes.
Unless you’re making some kind of Nigella-Heston-Mary-Berry mega-dessert extravaganza, there’s really no need to put that much sweetener in a recipe. Usually, we’ll use fresh fruit and spices for flavour and keep the added RMS to one teaspoon or less per serve. In fact, we’d even encourage you to reduce it or omit entirely, if your taste buds can handle it.
