Easy Low Carb Keto Prosciutto Wrapped Asparagus

This Easy Keto Grilled Asparagus recipe wrapped in Provolone cheese and Prosciutto makes it the best grilled asparagus you've ever had! Just 4 simple ingredients and you've got a gluten free, low carb and ketogenic diet approved low-carb recipe! I've also included oven directions if you prefer!

Grilled Asparagus

When it comes to easy side dishes or delicious appetizers for a dinner party, I'm all about quick and tasty these days, especially in the hot summer months!

Recently I shared my Grilled Cheesy Bacon Hasselback Zucchini and it's been blowing up the internet because it's so easy and versatile!

My hubby is an asparagus lover, but to be honest with you, I'm not that much into asparagus. I actually prefer green beans! My favorite are my Oven Fried Garlic Parmesan Green Beans! 

But the hubby requested some good asparagus and so I obliged, but made it a little bit more spectacular than just roasting them. 

Perfect side dish with any entree and who doesn't love a little gooey cheese and crispy cured meat on the outside of a veggie, right?

Grilling asparagus makes it quick and easy and doesn't heat up your kitchen, but feel free to simply roast when the weather isn't great to grill outside. 

Carbs in Asparagus

If you were to weigh 3 medium sized asparagus on a scale, it's about 50 grams. According to the app Cronometer, that would have 2.1 grams of carbs and 11 calories. This is certainly a great way to enjoy a low carb side with any protein you like.

Adding the slices of prosciutto and cheese only adds 1 gram of carbs to your total, but does increase calories, just be aware of that if you are tracking all your macros for weight loss.

How many carbs should you eat for weight loss really depends on your age, activity and health goals. But for most women over the age of 40, you will also still need to count calories as well as carbs for weight loss, despite some influencers saying you don't need to.

Prosciutto-Wrapped Asparagus Spears

Prosciutto is an Italian, thinly sliced dry-cured ham, usually served cold and uncooked, often wrapped with fresh cantaloupe, or just on a charcuterie board as an appetizer. 

If you would rather make this recipe with bacon you certainly can swap and it will be just as delicious. 

Perfect all summer long or in the winter bake in the oven!

Of course if you aren't into grilling you can simply roast the asparagus and then wrap a slice of prosciutto around a few spears to make asparagus bundles and then broil a few minutes until the cheese is all melted and gooey!

But I highly recommend grilled if you are cooking some protein out there on the grill anyway. No heating the house in these warm summer months is key for me!

My hubby declared these the best darn fresh asparagus he's ever had! And said, "These are even good COLD!" So that says a lot from a picky man!

Grilled Cheesy Prosciutto Wrapped Asparagus

Ingredients

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • salt & black pepper to taste
  • 7 oz Provolone cheese or 196 g
  • 4 oz prosciutto thinly sliced or 102 g
  • optional; grated parmesan cheese

Instructions

Grill Instructions

  • Cut about 2 inches off the ends of the asparagus and discard.
  • Wash and dry and place in a bowl.
  • Add the oil and salt and pepper to taste and toss.
  • Place on a medium high grill and cook for about 10 minutes turning to grill on each side.
  • Set aside on a plate and slice provolone cheese slices in half as well as the prosciutto slices.
  • Place one half piece of prosciutto on cutting board, one half of cheese on top of prosciutto and one asparagus on top of cheese. Roll up.
  • Continue with all of them and place back on the grill for a minute or two until the cheese has melted the prosciutto is crispy.

Oven Instructions

  • Preheat oven to 400 degrees. Place a piece of parchment paper onto a large baking sheet pan. 
  • Add the oil and lay the asparagus stems. Use your hands to toss the oil over all the asparagus.
  • Separate into 8 equal bundle of asparagus and wrap one slice of cheese and then one slice of salty prosciutto around each bundle.
  • Sprinkle garlic salt and pepper over the asparagus.
  • Roast for 15-20 minutes until tender and you can insert a fork with ease through the end of the thicker asparagus.
  • Immediately out of the oven, sprinkle the Parmesan cheese over the top and enjoy!
