Sugar-Free Peppermint Mocha Pudding is pretty enough for guests but easy enough for any weeknight treat! Just 7 ingredients and just 3 g net carbs!

Sugar-Free Peppermint Mocha Pudding

When I think about all the creative keto desserts I usually make, nothing is more loved than, plain and simple creamy pudding by my family. It is just a favorite in our house.

Maybe it's the creamy flavor and smooth texture or the fact it's a chocolate dessert.  I don't mind my kids having it every day if they like, and however it came to be, pudding is a must in our home.

This low carb keto chocolate pudding recipe I'm sharing today has a festive touch with peppermint flavors! Perfect treat for mom too!

Carbs in Traditional Chocolate Pudding

​The amount of sugar grams in store bought chocolate pudding, according to the app Cronometer, has about 17 grams in a 3.5 ounce serving.

With almost 23 grams of carbs, which is quite high, would surely spike blood glucose and probably kick you out of ketosis, if you're on a keto diet.

​Our pudding mixture uses minimal ingredients and has less carbs and less sugar, making it a great recipe whether you're following a ketogenic diet, low carb diet or just looking to reduce your daily sugar intake.

Our keto pudding has 6 total grams of carbs and just 1 gram of sugar coming from the heavy cream used. With 3 grams of dietary fiber, net carbs are just 3 grams.

Peppermint Mocha Flavor

​The holiday season isn't over until New Year's so I'm making favorite treats for us for New Year's Eve!

Peppermint flavor is abundant in this pudding, but if you're not a fan, you can leave out the peppermint extract and peppermint stevia and swap with chocolate liquid Monk Fruit or chocolate stevia. 

You can really make this pudding with any low carb sweetener of your choice. Here's my Sweetener Guide & Conversion chart to help you decide how much to use.

If you're not a morning coffee drinker or a fan of coffee flavors, you can swap out the hot coffee with unsweetened almond milk, regular milk (whole would give best results) or coconut cream, coconut milk or even heavy whipping cream. 

If you don't want the caffeine from coffee, use decaffeinated or you could even use something like chai tea.

Sugar Free Homemade Peppermint Mocha Pudding

I can't seem to make it fast enough of this grain-free pudding to keep up with my crew. It's usually gone within a day of making. I try to keep my pantry stocked with my Dry Instant Chocolate Pudding mix at all times. 

Taking our typical chocolate pudding to another level with some festive holiday flavors is a nice change during this time of year!

With the new flavor of peppermint mocha liquid stevia from Sweetleaf, I knew our favorite chocolate pudding would be the perfect way to experiment.

While there is some coffee in this pudding, hence the name mocha, I made it with brewed decaf for the kiddies, we don't need them any more excited then they all ready are for the holidays right?  

Top with a little Sugar Free Peppermint Whipped Cream and every bite will be heavenly!

Sugar-Free Peppermint Mocha Pudding

Ingredients

Instructions

  • Pour cream and cocoa into a small saucepan and whisk until combined. Bring to a simmer, then remove from heat. Stir in the coffee. Set aside.
  • In another bowl, whisk the egg yolks until smooth. Stir in the salt, peppermint extract and peppermint sweet drops into the egg mixture.
  • Spoon a small amount of the hot cream into the egg mixture to temper the eggs and stir well.
  • Add the egg mixture gradually into the cream in the saucepan, stirring constantly. Bring to a full boil over medium heat, stirring constantly. Reduce to a simmer and continue to stir for 1-2 minutes, until thickened.
  • Cool slightly, then transfer to small cups or one large container. Store pudding in an airtight container or place plastic wrap directly onto the top of the pudding so a skin will not form then refrigerate for 4 hours or overnight.
    Enjoy with some sugar-free peppermint whipped cream!
