If you're a lover of cheesecake, is there anything better than enjoying a creamy slice? Only one, that is a No Bake recipe that is also, Sugar Free, Gluten Free, Low Carb and Keto and tastes like Christmas day in pie form!

This No Bake Cheesecake pie takes very little time in the kitchen and is just in time for Christmas! Peppermint flavor throughout the cheesecake as well as the topping!

I use the app Cronometer and found a commercially prepared cheesecake has 20.4 grams of carbs for an 80 gram slice.

One slice of our low carb dessert has just 5 g net carbs or 8 total carbs per slice.
No Bake Peppermint Cheesecake Recipe with Nut Free Keto Crust
Almond meal may be substituted for sunflower seeds in the crust, barring nut allergy issues.
The crust is a nut free option as my youngest has a tree nut allergy.
Using almond flour in place of the sunflowers I've used is a fine substitution. If you prefer a standard baked pie crust, this keto chocolate pie crust is fabulous and also nut free.
The great thing about this low carb cheesecake recipe is that you can easily adapt it to how much or how little peppermint extract or peppermint candy you'd like to use.
Can I swap the peppermint extract?
If you don't want to use peppermint extract or peppermint stevia you can leave them out or swap with vanilla extract and vanilla stevia.
You could also use a few drops of peppermint oil instead of use a store bought peppermint extract.
Either way, a combination of peppermint stevia and the extract is what gives this no bake dessert an incredible minty flavor.
Low Carb Sweetener Options
And the same goes for the sweetness. Always add a small amount of any low-carb sweeteners I recommend then taste and adjust.
If you're worried about it being too sweet, since I do have a well known sweet tooth, reduce the amount I've suggested then taste again and adjust.

Can I use low fat cream cheese?
If fat is a concern, simply swap the regular cream cheese for a reduced-fat option.
I'd recommend sticking with full-fat cream cheese for the best results in taste and texture. Often low fat products contain sugar to amp up the flavor and usually have more carbs in them than using the full fat version of the product.

Sugar Free Peppermint No Bake Keto Cheesecake Recipe
No Bake Sugar-Free Peppermint Cheesecake Pie
Ingredients
Crust
- 2 cups sunflower seeds or almonds if no nut allergy
- ⅓ cup unsweetened cocoa powder
- 4 tbsp butter softened
- ¼ teaspoon salt
- ¼ cup Swerve sweetener
Filling
- 16 ounces cream cheese (softened cream cheese or room temperature)
- 1 teaspoon peppermint liquid stevia
- 1 teaspoon peppermint extract
- ¼ teaspoon salt
- 1 cup heavy whipping cream
Topping
- ½ cup heavy cream
- ½ teaspoon peppermint liquid stevia
- ¼ teaspoon peppermint extract
Optional Topping
- ½ cup sugar-free candy canes crushed
Instructions
Crust

Prepare the no-bake crust by placing all ingredients into a food processor. Process until the mix is a fine crumb consistency.

Taste the crust and add more low-carb sweetener, as needed. Spread into a 9-inch pie dish. or you could also use a springform pan if you prefer. Set aside.
Filling

Place all filling ingredients, except heavy cream, into a stand mixer and blend on high until smooth. Taste and add more stevia as needed.

Pour heavy cream into a new mixing bowl and use an electric mixer to blend on high until all whipped in texture and you have stiff peaks. Fold this whipped cream into the cream cheese filling. Spread this into the pie crust.
Topping

Add all topping ingredients into stand mixer, except crushed candy canes, if using. Blend on high until whipped. Taste and adjust stevia, if needed.

Spread this over the cheesecake filling. Top with crushed peppermints if desired. Cover with plastic wrap and refrigerate pie for 3-4 hours or overnight.
