Who doesn’t love a good pizza?
Trouble is, the one you usually opt for from your local takeaway is likely packed with nasty vegetable oils and sugar-laden sauces. Just because you’ve given sugar the flick however, doesn’t mean you need to say farewell to pizza (phew!). In fact, we’re confident when we say that once you’ve tried this beet beauty, you’ll be converted.
The best bit about this recipe is that we’ve literally taken your veggie scraps (AKA those beet leaves) and transformed them into the most delicious multi-purpose pesto EVER. Yes, it’s super tasty spread across a pizza base, but it’s equally delicious stirred through pasta or served with fresh roast veg.
When it comes to toppings, everyone has their go-to combos, but don’t be afraid to get creative – and get the kids involved too! Homemade pizza is a great way to use up any slightly wilted veg, so whack them on, sprinkle with cheese and devour.
