Bargain hunter alert! How we had lunch for less than $4 a head

At IQS we love to sit down to a hearty meal together.

Here’s a sneak peek into our latest team lunch that came in at under $4 per person!

The menu:

Roast chicken and veggies with kale salad and warm sourdough bread.

Shopping list:

  • 2 chickens – $9.39 each
  • 2 bunches of kale – $3.50 each
  • 2 bunches of broccolini – $2.00 each
  • 2 avocados – $2.00 each
  • 1kg sweet potato – $7.00
  • 2 onions – $0.88
  • Brazil nuts – $5.99
  • 2 loaves of sourdough – $3.00 each

Total: $53.66

Extras from the fridge and garden:

  • Parmesan cheese
  • Fresh mint
  • Fresh parsley
  • Herbs to season the chicken
  • Lemon

After scoring two free range chickens on sale (win!), we seasoned the chook with some herbs from the pantry to make sure the skin came up nice and crispy. We then threw in some sweet potatoes and onions for good measure, letting them tenderise in the chicken juices.

To add some greens to our meal, we put a twist on the “Kale” Me Anytime Salad, adding parmesan cheese from the back of the fridge and Brazil nuts as they were the cheapest on the day. Bargain!

To top it all off, we served our roast with some steaming hot sourdough on the side. Bon appetit!
