Why you should use that bag of carrots lying in the back of your fridge

We’ve all fallen victim to buying that giant bag of carrots from the fresh food aisle on a whim. Seems like a great idea…

… until two weeks later when they’re still sitting in the back of the fridge!

Carrots aren’t often the stars of meals – but we reckon they should be! Here’s why you should grab that bag and get cooking.

1. They help prevent heart disease.

Researchers in Scotland revealed that cholesterol levels (a major factor for heart disease) dropped by an average of 11 per cent if participants consumed raw carrots every day for three weeks.

2. They’re a huge boost to your immune system.

Carrots are rich in vitamin A and beta-carotene. This not only gives them their gorgeous colour, but this potent antioxidant helps to bolster your immune system. Winner!

3. They help your vision.

This is probably one of the more well-known fact about carrots, and for good reason. The high levels of beta-carotene and vitamin A support eye health.

4. They assist in blood sugar regulation.

Carrots are helpful for blood sugar regulation thanks to the presence of carotenoids.

Carotenoids inversely affect insulin resistance and therefore help regulate the amount of insulin and glucose that is being used and metabolised by the body.

5. They even keep your pearly whites healthy!

Carrots make us produce more saliva when we eat them. Saliva is an alkaline substance that helps protect our mouths against bacteria and foreign bodies that can cause cavities (and other oral health risks).
