Here at IQS, we’re a little zucchini mad!
Somehow we manage to pack this delish veggie into sauces, smoothies AND chocolate bread (that’s a crowd fave!). It’s even great on its own.
And this slice definitely lets it shine. We’ve grated up half a kilo of the stuff to bulk out this recipe with enough greens to make Kermit the Frog feel pale in comparison.
Paired with eggs, cheese, kale and feta, it also has enough fat and protein to keep you going for hours (it’s most delicious warmed up the next day for lunch). Keep it in the fridge for up to four days… but we don’t think it will last that long!
