Often, we don’t think potato salad deserves the “salad” title.
One particular potato salad dressing on the market has sunflower oil and sugar as the top two ingredients besides water!
So, when we saw Vladia Cobrdova’s recipe for healthy potato salad in her new cookbook, A Whole New Way to Eat, we just had to share it with you.
Instead of weird sugary mayo stuff, Vladia has dressed her spuds in yoghurt, tahini and mustard. She’s also added turmeric, which is as good at reducing inflammation as it is making your dish look amazing!
Top with onions, gherkins, dill and soft-boiled eggs and you’ve got yourself a damn good healthy potato salad. This one is definitely deserving of its title!
