The 10 basic cooking skills everyone should know

To give you a taste of the kind of culinary prowess you learn on the Program, here are 10 basic cooking skills everyone should know.

1. How to boil an egg.

Place your fresh eggs in a pot and fill with cold water until eggs are fully submerged (putting eggs in AFTER adding water could cause them to crack when they fall to the bottom).

Bring the water to a boil, uncovered. Once at a rolling boil, remove pan from heat and cover. Set your timer for the desired time (depending on how you want them to turn out):

  • For runny, soft-boiled eggs: 3–4 minutes.
  • For more firm soft-boiled eggs: 5–6 minutes.
  • For creamy hard-boiled eggs: 8–10 minutes.
  • For very firm hard-boiled eggs: 12–15 minutes.

For most rice, we recommend using a 1:2 ratio of rice to water.

Rinse rice in a strainer before cooking. Bring the rice and water to a boil. Cover the pot and turn the heat to low. Check the rice after about 10 minutes.

When done, the rice will be firm but tender and no longer crunchy. Turn off the heat and let it stand for a few minutes, covered, before fluffing with a fork. Viola!

8. How to chop an onion.

With a gas mask on… just kidding!

Trim off the stem end of the onion with your knife (about half an inch from the top) and discard. Then turn the onion to rest on the new flat end. Slice in half vertically.

Peel off the papery layers of skin and discard. Take one onion half and lay it flat on cutting board. Holding the root end, cut vertically along the onion. Rotate and then slice vertically through the onion. And repeat!

9. How to cook pasta al dente.

Take a big pot and fill it with 4-5 quarts of water then salt that sucker up. This is only chance in your cooking process to season your pasta – so don’t be afraid of it! Put the heat on high and wait for the water to reach a boil before tossing your dried pasta in.

Then stir that pot like it’s the end of the world (we don’t want the pasta to stick to itself in a clumpy mess). Check back in with your pasta over the next few minutes until your pasta has the texture of gum (al dente) then take it out of the water and into an awaiting strainer.
