5 egg-cellent Easter recipes to try this weekend

Written By Unknown on Wednesday, 12 April 2017 | 18:04

With Easter just around the corner, you’re probably on the hunt for some healthy sugar-free meals to dish up on the big weekend.

These five recipes have you covered (and yes, there ARE chocolate eggs!).

1. Chive, Kale + Parmesan Pancakes with Poachies

Before you tuck into your chocolate eggs (we’ll get there in a second!) start your day with a protein-packed, poached version. These ones come with savoury pancakes and plenty of greens for a veg-packed start to the holiday.

2. Gut Lovin’ Easter Eggs

Send the kids on an egg hunt that won’t have them sugar-crashing in the afternoon with homemade chocolate Easter eggs. These ones pay homage to traditional fluffy marshmallow chicks, made with our I Quit Sugar: Gut Lovin’ Gelatin instead.

If you’re looking for more recipes that combine chocolate with our favourite gut-lovin’ ingredient, don’t go past our brand new eBook, I Quit Sugar: The Mini Book of Gut Lovin’ Desserts. It’s packed with quirky creative ideas that will make a showstopping addition to every Easter!

3. Greek Lamb Shoulder

Although customarily eaten by Greeks on Easter to mark the end of the 40 days of meat-free Lent, you don’t have to be Hellenic to serve this succulent centrepiece for Easter lunch!

4. Chocolate Chip Hot Cross Buns

They’re not around for long so get them while they’re hot. This recipe puts a fresh twist on an old family favourite and it comes minus the sugar that’s crammed into many store-bought varieties.

5. White Chocolate Bunny Tails

Since you have a legitimate excuse to eat chocolate today, take it! Just make sure it’s the good quality kind. This recipe features four types of coconut and is super rich so you’ll only need a bit to feel satisfied.
