The lamington is Australia’s unofficial national dessert. (Sorry, pavlova, but there’s too much contention over whether you really belong to the Kiwis.)
In fact, a plate of lamingtons, with their fluffy, jammy centre and chocolate-coconut coating, can unite everyone… except those who have quit sugar.
That’s why we’ve come up with a lamington recipe that’s got all the classic flavours without the dizzying sugar rush. They also gluten-free and dairy-free, so everyone can join in on the fun!
With sweet coconut flour, healthy chia jam and a thick coating of raw chocolate, they may be a bit more fiddly than picking up a pack of dry sponges at the supermarket. But trust us, they’re definitely worth it.
