5 veggies to cook for Christmas dinner (that aren’t Brussels sprouts)

Don’t get us wrong here, we love crispy, roasted Brussels sprouts as much as the next person.

But is you’re buying seasonally (as we like to do), these traditional Chrissie dinner staples are tough to come by in the heat of Aussie summer. Plus, wintery veg can tend to be a little heavy, not ideal when it’s 30ÂșC out!

Luckily, there’s plenty of delicious in-season veg that’ll please the whole mob on the big day just as much as all our wintery favourites.

1. Easy Peasy Zucchini Blinis.

Fresh, roasted, spiralised into zoodles… there’s not much zucchini can’t do. Whip up these hearty fritters ahead of time, so all you need to do is chuck them in the pan 10 minutes before Christmas lunch.

2. Oven baked Eggplant.

A hearty veg is sure to please the meat eaters and vegos alike. This one is served up with a cooling Paleo Tzatziki. If you’re a fan of dairy, you can replace the avo with full-fat yoghurt.

3. Middle Eastern-Inspired Salad.

Simple but effective, this easy salad packs a Middle Eastern flavour punch. We love the roasted cauliflower paired with a tasty tahini dressing.

4. Super slaw.

Why stop at red and green when you can celebrate with the entire rainbow at Christmas time? Packed with cabbage, capsicum and kale, make one in advance and refrigerate for extra flavour and crunch.

5. Sesame Crusted Haloumi and Strawberry Salad.

Nothing says summer like fresh strawberries. This recipe thinks outside the berry box by pairing the strawbs with super nutritious watercress and sesame crusted haloumi. Trust us, it’s a taste sensation!
