The post-Christmas period often sees our fridges filled to the brim with leftovers. Question is, what do you do with it all?
Stop before you toss! There’s a whole heap of things you can do with your leftover Chrissie ham, veggies, wine or herbs to make brand new (and totally scrumptious) meals for the rest of the week (or even longer!).
Leftover Greens.
- Make Sarah’s Cheesy Green Mish-Mash Soup.
- Make a pesto. Blend leftover broccoli, kale, spinach or even carrot tops with garlic, parmesan, salt, lemon juice and olive oil to make a tasty pesto that you can stir through pasta or salads for an added green boost.
- Whip up a green smoothie. Green smoothies are a great way to use up leftover fresh greens. They’re super cleansing, perfect if you’re feeling like you have over-indulged.
Beetroot and Beetroot leaves.
- Try Sarah’s Sausage and Beetroot Hash.
- Do you usually chuck out your beet greens? STOP! Make this Beet Greens Frittata.
- Beetroot for dessert? It’s possible with these Beetroot Red Velvet Cupcakes.
Fresh herbs.
- Stir through meals. And we mean any meals! Just chop finely and toss into salads, stir-fries, curries, omelettes… whatever you like!
- Save for later. You can always dice herbs up finely and put in ice cube trays for a rainy day. Just fill with olive oil, melted butter or chicken stock, place in freezer and pop out as you need them.
Left over pumpkin or sweet potato.
Our answer: Purée! Then…
- Whip up a batch of Pumpkin + Ginger Spice Granola. If you’re not seeing some friends or family until after Christmas, this is a great gift idea!
- Add to soups, casseroles or porridge. These give instant sweetness and an extra dose of nutrition to any meal. Have a go at Sarah’s Sweet Potato Casserole!
Christmas Ham.
- Make a protein filled omelette. Start with a basic omelette using egg and milk, then stir through some finely diced Christmas ham.
- Make egg and ham frittatas. You can take these beauties with you on a summery picnic or family brunch. Just add chopped ham to our Fridgalicious Frittata recipe.
Wine.
- Use in cooking. Add a splash of wine to a pan when deglazing or making a casserole.
- Make some ice cubes. Fill each space of an ice cube tray about halfway full with fresh chopped herbs or even edible flowers and top with leftover white wine. These keep indefinitely and you can pop them out once frozen to store in a ziplock bag. When you want, just toss them into soups and sauces to cook off for a delicate flavour and smell.
- Make homemade vinegar. This idea comes from Jamie Oliver. He suggests decanting your wine into a bottle (1/2 full) and then wrapping in cling wrap and a tea towel. Leave it in your car boot for a month and you’re left with lovely acidic vinegar for dressings and sauces.
Chicken or fish bones.
- Make a stock. Sarah’s been known to pinch the chicken bones off her friends dinner plates to make chicken stock.
- Use as burley for fishing. Leftover seafood like fish heads are a fisherman’s friend. Perfect for a slow Boxing day out on the water.
