Unfortunately, many pub-bought versions can be hiding tons of the sweet stuff in their creamy dressings.
Not so with this healthified version of a salad classic! We’ve ditched sugary bottled sauces for a zingy lemon yoghurt dressing that pairs perfectly with bacon, egg and baby cos lettuce (and a slice of torn sourdough to mop everything up).
But the hero of the dish is definitely the crispy coconut prawns. They’re so simple to make and will seriously change the way you think about prawns. Forever!
