
One of the funnest things about quitting sugar is coming up with healthy, but still super tasty, versions of decadent treats.
This time, we’ve taken not one, but two traditionally sugary, junky favourites – the pizza and the pancake – and combined them into a dish so healthy, you can eat it for breakfast.
The chickpea pizza base is deliciously earthy with a dense, nutty texture. It’s the perfect blank canvas for a smear of ricotta, a crumbling of feta, piles of sweet blueberries and a drizzling of rice malt syrup.
This dish may seem a little confused, but don’t knock it ‘til you’ve tried it. And once you have, we’re sure this brekkie treat will become a regular weekend favourite.
