How to eat pizza for breakfast (and still stick to your healthy eating goals)

There are only two types of people in this world. People who have eaten cold, leftover pizza straight out of the fridge for breakfast… and liars.

Sure, our sample size is only IQS HQ, but we reckon everyone has eaten pizza for breakfast at least once. Why? Because it still tastes so good! Scientists (yes, actual scientists) have said that’s because the tomato paste prevents the oily cheese from sogging up the base. Result: perfecto pizza, even the day after!

But leftover pizza is not exactly the healthiest breakfast choice (and all that grease won’t be easy on an empty stomach). The solution? Something easy, quick and pizza-inspired, but without the bloated feeling afterwards!

This “Breakfast Pizza” from Rebecca Coome’s SIBO Family Favourites does the job. With an omelette base, it’s got all the classic pizza toppings – ham, tomatoes and black olives. Feel free to add your favourites, too!
