We’ve pumped the pumpkin with a powerhouse of anti-inflammatory spices that add a warm, earthy flavour and bring out the natural sweetness of our favourite squash.
And… that’s pretty much it! The salad is so easy to make – just toss the pumpkin with some greens, crunchy pepitas, a bit of quinoa and a sweet tahini and yoghurt dressing, and you’re done!
Don’t worry though, the healthy fats and juicy flesh mean this salad is more filling than most. Step aside, 3pm munchies, you’re not needed here!
