CREAMY PANNA COTTA
Panna Cotta in Italian means, "Cooked Cream". It's a very simple, yet elegant dessert that uses just a few ingredients.
Traditional panna cotta has cream, sugar and vanilla flavors in it, as well as gelatin to help it set and mold.
Sometimes other extracts like coffee or lemon, are used to create slight flavor variations in this wonderfully silky smooth, creamy dessert.
Carbs in this traditional Italian dessert according to the app Cronometer, a basic vanilla bean with about 100 grams for a serving has 16.5 grams of total carbs. That's quite high for anyone on a keto diet since most people stick to about 20-30 total carbs a day.

HOW TO USE GELATIN Powder TO THICKEN
Gelatin powder is a fantastic ingredient to use to thicken recipes like keto panna cotta. It can turn a liquid into a gel like consistency so it is a perfect ingredient to use for panna cotta.
While xanthan gum is a thickener in most baked keto dessert recipes, using it for this easy keto recipe would not work as well.
This Grass-Fed Gelatin is the one I use because of the fact of what I learned in Nutritional Therapy School about toxins.
All toxins are stored within our fat cells, people and animals, so if you want to make sure you aren't ingesting toxins, using grass fed gelatin is the best option for your health.
Another great brand is Great Lakes as well as Further Foods.
Simply evenly sprinkle the powdered gelatin over the cold cream in this recipe. Allow the gelatin to "bloom", by not stirring and letting it sit on top of the cream for about 5 minutes, then proceed with the recipe by heating the mixture to bring to a simmer.
This simmering while continually stirring will help the gelatin to dissolve smoothly into the cream and create that silky texture reminiscent of panna cotta.
KETO SWEETENER OPTIONS
The first time I made my original recipe, I used Swerve confectioners sweetener which has created delicious desserts for me over the years.
Unfortunately with the recent studies on erythritol and the concern of many who no longer want to use it, I'm working to replace it in many of my older recipes.
I don't have health concerns regarding using it, but if you have health care-related questions, please ask your own health care provider for health care advice.
I've changed this recipe to reflect no longer using erythritol and swapped with Monk Fruit Sweetener.
This brand combines monk fruit with allulose.
Allulose sweetener on it's own is not as sweet as stevia or monk fruit so you may need additional sweetener.
The best part is that since there is no eggs in this delicious dessert dish, you can taste the panna cotta mixture before pouring it into ramekins or panna cotta molds to set in the fridge.
Can I make this keto panna cotta dairy free?
Yes if you want to make this as a dairy-free option for family or friends you could swap the heavy cream with canned full fat coconut milk.
Since coconut is a strong flavor it will have less of a vanilla flavor for a keto coconut panna cotta.
Since this sugar-free panna cotta doesn't include eggs but does include gelatin which comes from animals it would not be vegan.
For a vegan option use agar agar to replace gelatin.

KETO PANNA COTTA Recipe
Keto Panna Cotta
Ingredients
- 1.5 cups heavy whipping cream swap with canned unsweetened coconut milk for dairy free
- ½ cup unsweetened almond milk use more coconut milk if allergic to almonds
- 2 teaspoons gelatin swap with agar agar for vegan
- pinch salt
- ⅓ cup Monk Fruit Allulose confectioners
- ½ teaspoon vanilla extract
Instructions

Grease four- 7 ounce ramekins.

Pour heavy cream and almond milk into a medium saucepan. Turn heat to medium heat and sprinkle gelatin over cream mixture. Don't stir, so gelatin blooms while the mixture comes to a simmer, about 3-5 minutes.

Once at a simmer, reduce heat to low and continually whisk mixture until gelatin mixture is completely dissolved.

Whisk in the salt, and sweetener and continue to simmer just about 2-3 minutes. Turn off heat and stir in vanilla extract. Taste and adjust sweetener if needed.

Evenly pour panna cotta mixture into ramekins and allow to cool 15 minutes. Place in the refrigerator covered with plastic wrap to set for about 6 hours of chilling time before serving or overnight.

Enjoy cold topped with fresh berries and sugar free whipped cream if desired.
