This easy keto strawberry mousse cottage cheese recipe is incredibly thick with a delicious creamy texture and has 9 grams of protein and just 4 grams net carbs per serving. 

Low Carb Keto Strawberry Mousse Recipe

If you're looking for ways to increase your protein intake, cottage cheese is an excellent source of protein and is super versatile for savory and sweet recipes.

The best part about this simple recipe is that even if you're not quite a fan of cottage cheese, I can honestly say this creamy dessert doesn't even taste like you're eating cottage cheese.

The texture completely changes and the strawberry flavor is all you'll taste in this creamy mousse. 

As a nutritional therapy practitioner I know the importance of daily protein intake and as someone who has been sugar free for 17 years now, I also know that protein satiates like no other macronutrient.

It also helps when you're sweet tooth is craving a sweet treat and you want to stick to your keto diet or low carb diet goals. I personal consumption of daily protein is anywhere from 100-125 grams. 

Lactaid 4% Cottage Cheese nutritional info according to the app Cronometer in ½ cup serving has 13 g protein, 5 g total grams of carbs, 5 g fat and 110 calories along with a good amount of calcium, potassium and sodium.

Low Carb Strawberry Mousse

This easy recipe requires just 5 simple ingredients:

Cottage Cheese, 4%, small curd

Strawberries- fresh or frozen

Heavy Cream

Collagen 

Gelatin

This is a perfect keto-friendly dessert to share with family and friends and easy enough for any busy weeknight!

Users on Tiktok- make it using full-fat cottage cheese and a sweetener of choice and then you can add other add-ins like fresh fruit or almond butter or natural peanut butter. 

The only thing that didn't work for me was that many are using maple syrup or honey to sweeten the cottage cheese mixture. I use a keto-friendly sweetener, and avoid all artificial sweeteners. 

BEST COTTAGE CHEESE BRANDS

Full-fat cottage cheese is best, either 4% or 2% cottage cheese will yield the best results. 

You can find many options for plain cottage cheese at your local grocery store, but specific brands vary in taste and texture.

I don't recommend fat free cottage cheese because it won't be as satisfying as full fat cottage cheese or as creamy. I like to use lactose free cottage cheese since my daughter and I both have lactose intolerance. 

The brand I like best is Green Valley organic, but the Lactaid brand is also a great brand as is, the Good Culture brand.

Can frozen strawberries be used instead?

I understand when it's not strawberry season it's easier to just use frozen strawberries.

I would recommend using less than I did with fresh, maybe just ¾ cup, only because once the frozen strawberries thaw a bit, you may end up with a very loose mousse.

You may also want to use more gelatin to keep this low-carb strawberry mousse nice and thick in texture. 

Can I swap the strawberries?

Yes you can use any fresh berries you like if you don't want to use strawberries. Low carb berries like raspberries, blueberries, or blackberries would be wonderful as well! 

Can I replace the cottage cheese?

You could replace the cottage cheese with full fat plain Greek yogurt or even plain Ricotta cheese but please not the nutritional information will change and will not yield the same amount of protein as using cottage cheese. 

Can I use an immersion blender?

I've not tested this recipe using an immersion blender but I am skeptical it will work as well as a blender or food processor. 

Do I need the collagen?

You could leave this out, it does provide added protein and does help thicken but since we are using gelatin to thicken this mousse, collagen peptides could be skipped.

I do still recommend though to increase your gelatin to 2 teaspoons if you choose to leave out the collagen. Increasing the gelatin would also require doubling the water amount to dissolve the gelatin. 

Do I need the gelatin?

Yes, absolutely gelatin is needed in this recipe because the pureed strawberries make the cottage cheese mixture very loose.

If you leave out the gelatin you will just end up with a strawberry smoothie, not a keto strawberry dessert airy mousse.

Low Carb Keto Cottage Cheese Strawberry Mousse

Ingredients

  • 1 cup cottage cheese
  • 1 cup strawberries or 128 grams
  • ¼ cup heavy cream
  • 1 scoop collagen peptides (27 grams)
  • 1 teaspoon gelatin
  • 3 tablespoon water

Optional

Instructions

  • Add cottage cheese and strawberries to a high powered blender or food processor, blend until smooth.
  • Add gelatin powder and water in a small bowl and heat until dissolved. Set aside.
  • Add heavy cream, collagen and optional ingredients to the blender and blend until smooth. Taste and adjust sweetener.
  • Drizzle in gelatin and blend once more until incorporated.
  • Pour into 4 serving glasses and refrigerate for 1 hour.

Notes

4 g net carbs per serving.
