It’s little secret we LOVE us some avocado.

But due to the sustainability issues of our favourite veggie-fruit (it’s actually a berry, did you know?), we like to stick to a quarter of an avo per meal.

Luckily, one avo lends itself nicely to all sorts of tasty dishes you can enjoy all week long! Check out our tips for keeping your avo fresh here.

1. Veg-packed breakfast: Chilli Bacon + Eggs with Sweet Potato Hash.

See ya later, sugary cereals! We love to start our days with a pile of veg, protein and healthy fats to keep us going all the way to lunch. The chilli in this delicious bowl adds extra kick to the morning.

2. Totally totable lunch: Spring Roll Bowl.

We’ve taken all the best parts of a fresh spring roll and upended them into a bowl of goodness that tastes just as epic as it looks. The avo here works perfectly with punchy Asian flavours.

3. Dinner fiesta: Mexican Nachos with the lot.

We bulk out the avo guac in these nachos with green peas. Genius!

4. Secretly healthy dessert: Avo Choccy Mousse For One.

A quick, easy and healthy dessert you can make with pantry essentials? It can be done!

You’ll need:

  • ¼ avocado.
  • ½ small banana.
  • ½ cup coconut milk.
  • 1 tbsp cacao.
  • ½ tsp rice malt syrup.

Just blend together (with a stab mixer or in a high-powered blender) and serve with your favourite nuts and seeds, full fat yoghurt or some berries if you have them lying around. YUM!
