6 surprising things you can make in a microwave

Thought microwaves were only good for reheating leftovers? Think again!

From muffins in a mug to the crispiest bacon strips, there’s actually a whole heap of easy microwave recipes out there, perfect for when you need a quick meal or snack on the go.

And yes, there is still a bit of controversy surrounding this particular kitchen appliance. But we reckon if a microwave is the only thing standing between you and a healthy meal (we’re looking at you, work kitchen), then go for it!

1. Paleo Choc Coco Muggin.

Don’t be put off by the epic muggin cake fails gracing the interwebs. Making your own muffin in a mug (or muggin, if you will) is possible. And if you follow our super easy recipe, it’s practically foolproof!

2. Toasted nuts.

Pimp your nuts by popping them on a microwave safe dish and microwaving on high for 2 minutes. Give them a stir, then continue microwaving in 1 minute intervals until your nuts are toasted and fragrant. We love ours with this anti-inflammatory spice mix.

3. Eggy Muggin.

This Eggy Muggin is an absolute lifesaver if you need a quick and easy breakfast fix. Whack in some greens and cheese and you’re good to go.

4. Crispy bacon.

Yes, really! Cooking it this way means the mess gets kept to a minimum.

Just line a microwave-safe plate with paper towel. Lay your strips of bacon on the paper (don’t overlap the pieces otherwise it won’t cook evenly). Cover the bacon with another sheet of paper towel (lest your microwave be covered in bacon fat!) and cook for around 3 minutes on the highest setting (or 90 seconds per slice).

5. Caramelised Coconut Chips.

You can easily adapt this tasty recipe for the microwave. Simply cook your coco on high for 2–3 minutes until it’s golden and crunchy. The perfect 3pm slump buster!

6. Veggie chips.

All the flavour of vegetable crisps minus oil or oven trays!

To make, thinly slice your root veg of choice (we love sweet potato or beetroot) and arrange the veggie slices on a paper towel-lined, microwave-safe tray (make sure they don’t overlap). Season lightly with dried herbs, salt or pepper and microwave on high for 3 minutes. Flip them over and microwave at medium heat for another 3 minutes. Voila!

You can also make these tasty Kale Chips in the microwave using the same method. They’ll just need 3 minutes all up.
