
In the IQS office we’re a little of – okay, a lot – obsessed with chai.
But we’re not talking about the powdered stuff you get at a cafĂ© (complete with half a jar of honey). We love to brew our own from scratch, with cardamom pods, cloves, ginger, peppercorns and star anise.
This Rooibos Chai from the first I Quit Sugar book is a smooth upgrade on a time-tested recipe. If you haven’t tried rooibos (pronounced roy-boss) yet, it’s a vibrant red tea that’s nutty, sweet and has a rich yet mellow flavour reminiscent of chocolate. In other words, it’s the perfect complement for chai.
Plus, rooibos tea could be healthier. It’s totally caffeine-free and lower in tannins than green and black tea, making it easier to digest. More chai for everyone!
