3 cool ways to cook with quinoa

We introduced you to the ancient super seed quinoa in our bluffer’s guide series.

Quinoa is easy to cook, ridiculously healthy and makes for an excellent salad base. So it’s not surprising that it features in many of our I Quit Sugar: 8-Week Program recipes.

If you’re new to this pseudo-grain or just looking to expand your repertoire, here are three interesting ways you can cook with quinoa.

1. Use it as a replacement for most grains

Quinoa is gluten-free, making it suitable for coeliacs or those on a gluten-free diet. Serve it with your favourite pasta sauce, crumb your fish with quinoa flakes or replace the rice and use it to make more nutrient-dense sushi rolls.

2. Stuff it into vegetables.

If you’re catering for vegetarians or looking to cook with a meat-free source of protein, you can use quinoa to stuff your veggies. 

Our social media manager Lee whipped up these quinoa-stuffed roast capsicums at our Team Lunch Club and they were a hit with meat-lovers and vegetarians alike.

“Just mix together black beans, cheese and cooked quinoa, then stuff them into your favourite veggie. I used capsicum, but you can try mushroom or zucchini too,” says Lee. “Top with more cheese and grill them at 180 degrees until the cheese melts. Serve with fresh parsley, shoot a pic for Instagram and enjoy!”

3. Have it for breakfast.

As well making a great replacement for traditional oats and muesli, quinoa also stars in this nutritious breakfast cake. It adds a little extra hit of iron, calcium and vitamins. And a lovely nutty flavour.
